Sausage Egg Bake


. . . because breakfast is just as important to us as dinner

. . . because we don't get to see each other for lunch
(because we do this thing called work so we could have shelter and cook at home)

. . . because i know that he'll get caught up with work and won't eat until dinner

. . . because i hear breakfast is the "most important meal of the day"

. . . because i feel that breakfast should be "warm" and not cereal

. . . because it's the breakfast of champions and we are champs

. . . because if i can, i will


i turned the oven to 375 degrees F. i precooked three sausage links in a cask iron pan then seared half an onion (sliced). in a bowl - i whisked up six eggs, a cup of milk - sprinkled salt, black pepper, and red pepper flakes - mixed in fresh spinach, bacon bites, sliced tomatoes, and cheese. give it another good mix and add it to the cask iron pan of the sausage and onions. cook for half hour or until you stick a tooth pick in the middle of dish and hardly anything sticks on. allow to cool and enjoy with others because i ate only a quarter of it.

and yes, i actually do get up that early (6am - not bad) to make a non-cereal breakfast. it probably took 10-15 minutes for prep and half hour to bake in oven.

it's a toss up, him or i cook, or even both (team work). breakfast is so good! i hope you all get to enjoy a hearty breakfast, too! if not on weekdays, at least weekends, it's so good for the heart and soul! ♥
