stuffed mushrooms

brady made stuffed mushrooms for my family’s thanksgiving feastation this past weekend.

please excuse that brady did not fully measure the amount of ingredients used; therefore, i will guesstimate.
(both brady and i eye-ball the amount when cooking).

mushrooms, steemed - about 20
hot italian sausage - about 1 cup
dried breadcrumbs - about 1 cup
pecorino romano - about 1 cup
garlic - 2 cloves
cilantro - about ¼ cup
green onions - about ¼ cup
salt and pepper

preheat oven to 400 degrees.
take the stem out of the mushroom and clean with a dry towel. do not get mushrooms wet!
grate the pecorino romano.
almost finely chop the garlic, cilantro, and green onions.
in a bowl, stir the hot Italian sausage, breadcrumbs, pecorino romano, garlic, cilantro, green onions, salt, and pepper.
spoon the filling (what you just stirred in together) into the mushroom cavities and arrange on the baking sheet. bake in oven until golden, about 30 minutes. serve and enjoy!

well, we are off to brady's dad's for thanksgiving this week. it's kind of nice that we have one feast out of the way because it can be overwhelming for me when we have to stop at three places in a day! i kind of don't really get to enjoy myself and others because we have to watch the clock and what we eat, so i'm pretty stoked that dates are spread out this year between our families.
