pork loin roast + butternut squash

it was lonely eating dinner last week when Brady was out of town for work. so happy he is back home (and early). so much better eating with him (or with good company).

anyway, i hardly ever cook pork anymore, so i thought i would last night.

i purchased an already marinated pork loin roast from our local grocery store & butternut squash. i cooked the pork according to the package, but a little longer since all ovens are different. with the butternut squash, i cut it in half, scooped out the seeds, brushed olive oil on face of squash then baked faced down at 350 degrees for about half an hour (until soft). i crushed some black pepper & sprinkled some pepper flakes. so delicious. eating the squash reminds me so much of my youth, my mom always made it.
